Of Burgundian origin, Adeline originally wanted to become a German teacher. Thankfully for gourmands, she instead enrolled at the famed Ferrandi cookery school, later teaming up with her husband – Hong Kong-born tea master Chi-Wah Chan – to open haute Franco-Chinese restaurant, Yam’Tcha, in 2009 (it received a Michelin star just a year later). The restless chef has continued to wow diners while nurturing a now three-strong empire, based around Les Halles, and including a tea and bao shop, and bistro.
