Born to an Auvergnat family, in 1996, alongside his parents, Nicolas launched the popular yet refined Julhès épicerie in Paris’ multi-cultural 10th arrondissement, stocking a cosmopolitan range of deli items. It was here that he fell for the world of spirits, finessing his talents as a consultant for market leaders Diageo. In 2010, inspired by a new wave of micro-producers, he began a five-year battle to open Paris’ first legal distillery, which has now spawned a dedicated shop stocking small-batch spirits and perfumes.
