Anglo-French autodidact baker Alice and Brit chef Anna – friends since they met at Rose Bakery in 2002 – are staples of the Paris food scene: after launching Le Bal Café, with a menu influenced in part by Anna’s experience working at London’s St. John Bread and Wine, in 2012 they reunited with Alice’s husband Anselme to create the pioneering coffee shop Ten Belles. The original Canal St-Martin café now has a sibling on the Left Bank, as well as a new-gen bakery, Ten Belles Bread.
